FERNA TURTLE PIE

CUSTARD

Ingredients Quantity
Oreo cookies, crushed 2 1/2 cups
Butter, melted 1/3 cup
All purpose flour 65 grams
FERNA IODIZED SALT Pinch
Fresh eggs 2 pcs.

Toss together. Bake for 5 minutes then cool. Freeze to set.

CARAMEL LAYER

Ingredients Quantity
Brown sugar 1/3 cup
Pecans, coarsely chopped 1 1/4 cups
Butter, unsalted 1/2 cup
FERNA IODIZED SALT Pinch
Cream 3/4 cup

Sautee pecans in butter till toasted. Add brown sugar and FERNA IODIZED SALT. Cook till syrupy. Add cream. Mix well. Cool. Pour into prepared crust.

MOUSSE

Ingredients Quantity
Bittersweet chocolate 2 cups
Whipping cream 6 tbsps.

Melt chocolate over double boiler. Add warm cream. Whisk well. Add the following:

Ingredients Quantity
Vegetable oil 2 tbsps.
Coffee liqueur 3 tbsps.
FERNA COFFEE-MOCHA FLAVOR 1 tsp.
FERNA VANILLA LIQUID 2 tsps.

Cool. Whip 1 cup whipping cream. Fold into ganache. Fill tart.
