FERNA FLAVORED OTAP

DOUGH

Ingredients Quantity
Bread flour 500 grams
FERNA IODIZED SALT 7.5 grams
Refined sugar 50 grams
EAGLE INSTANT DRY YEAST 2.5 grams
Bread improver 2 grams
FERNA PRIMERA CHOCOLATE FLAVOCOL 17 grams
Water 275 grams

Mix all the ingredients until a good dough is formed. Set aside.

BUTTER MIX

Ingredients Quantity
FERNA BUTTINA BUTTER SUBSTITUTE 100 grams
Soft flour 50 grams

Blend the two ingredients, divide into four. Set aside.

ASSEMBLY
1. Form the dough into a rectangle. Spread one part of butter mix, fold and then roll. Repeat the procedure three more times. The last fold must be rolled as thin as possible.
2. Roll the dough into a baston. Rest for 10-15 minutes.
3. Cut crosswise (10g/pc, or as per desired weight). Flatten and sprinkle sugar on one side. Rest for 30-45 minutes.
4. Bake at 3500F for 10-15 minutes or until golden brown.
