FERNA
REGULAR BOILED ICING

PROCEDURE
1. Put egg whites and FERNA CREAM OF TARTAR
in the bowl mixer. Attach wire whisk in mixer.
2. Place sugar and water in a small thick saucepan.
3. Clip a candy thermometer on the side of the
saucepan. Cook sugar and water over medium fire.
4. When the temperature registers 2550F, start
beating the egg whites and FERNA CREAM OF TARTAR
at high speed of the mixer. Do not remove the
syrup in the saucepan. Continue cooking the
syrup until the temperature registers 2600F
(hard boil stage). Remove from the fire then
pour half of the syrup, at medium speed of the
mixer. Pour it like that of the stream of a
faucet. After pouring half of the syrup, increase
the speed again to high. Count 1-10 then lower
the speed to medium then pour the remaining
syrup. Put back the speed to the highest; continue
beating the icing until of spreading consistency.
