FERNA
PHILIPPINE GUM PASTE

| FERNA CLEAR & UNFLAVORED GELATINE |

| Cold water |
2/3 cup |
| Powdered sugar, sifted |

PROCEDURE
1. Place water and FERNA CLEAR & UNFLAVORED
GELATINE on top of the boiler. Soak for 5 minutes.
2. Cover over low fire for 4 minutes or until
mixture becomes clear. Cool.
3. Put powdered sugar in the kneading table.
Make a well in the center then add the cook
mixture. Gradually add confectioner’s
sugar, stirring continuously. If the mixture
becomes too heavy to mix, start kneading by
hand until smooth and pliable. Add extra confectioner’s
sugar if necessary. Store in airtight container.
