FERNA OTSO-OTSO BREAD

DOUGH

Ingredients Quantity
Bread flour 1000 grams
EAGLE INSTANT DRY YEAST 10 grams
FERNA IODIZED SALT 8 grams
Refined sugar 180 grams
Skim milk powder 30 grams
Bread improver 4 grams
FERNA PRIMERA ANTI-AMAG 1.95 grams
FERNA PRIMERA EGG YELLOW POWDER COLOR 0.64 grams
FERNA BUTTINA BUTTER SUBSTITUTE 50 grams
Water 400 grams
Powdered sugar for decoration

FILLING

Ingredients Quantity
Refined sugar 120 grams
All-purpose flour 55 grams
Evaporated milk 1 can
Egg, beaten 1 pc
FERNA PRIMERA UBE FLAVOCOL 1 tbsp. + 1 1/2 tsp.

PROCEDURE
1. Combine all dough ingredients and knead for 8 minutes or until gluten is fully developed. Rest for 1 hour.
2. In a heavy sauce pan, combine sugar, flour, evaporated milk and FERNA PRIMERA UBE FLAVOCOL. Cook until slightly thick then add the beaten egg. Cook until mixture coats the spoon.
3. Cut dough into desired weight. Using a rolling pin, flatten the dough to 1/4 inch thickness. Spread about 1 tablespoon ube filling then roll
