FERNA CHEESE BREAD

DOUGH

Ingredients Quantity
Bread flour 750 grams
EAGLE INSTANT DRY YEAST 7.5 grams
FERNA IODIZED SALT 9 grams
Powdered milk 18.25 grams
Bread improver 5 grams
FERNA PRIMERA ANTI-AMAG 2.25 grams
Sugar 150 grams
Water 300 grams
FERNA PRIMERA CHEESE FLAVOR 2.5 grams
FERNA BUTTINA BUTTER SUBSTITUTE 45 grams

TOPPING

Ingredients Quantity
Refined sugar 100 grams
FERNA MASINA BUTTER SUBSTITUTE 80 grams
Powdered milk 80 grams
FERNA PRIMERA CHEESE FLAVOR 3.5 grams
FERNA EGG YELLOW POWDER COLOR 0.23 grams
3rd class flour 100 grams

Combine all ingredients, mix well. Set aside.

PROCEDURE
1. For the dough: combine all ingredients and knead for about 8 minutes or until gluten is fully developed. Rest for 30 minutes.
2. Cut into 400-g portions and form into a big oval shaped dough. Rest for 1 hour.
3. Make a 1/4 inch-deep slash along the length of the dough. Brush with egg wash and top with the prepared topping.
4. Bake at 350°F for 30 minutes or until golden brown.
