Combine all ingredients, mix well. Set aside.
PROCEDURE
1. For the dough: combine all ingredients and
knead for about 8 minutes or until gluten is
fully developed. Rest for 30 minutes.
2. Cut into 400-g portions and form into a big
oval shaped dough. Rest for 1 hour.
3. Make a 1/4 inch-deep slash along the length
of the dough. Brush with egg wash and top with
the prepared topping.
4. Bake at 350°F for 30 minutes or until
golden brown.
