FERNA BUKO PINA PAO

DOUGH

Ingredients Quantity
All purpose flour 6 cups
EAGLE INSTANT DRY YEAST 2 tsps.
Water 1 3/4 cups
FERNA IODIZED SALT 1 1/2 tsps.
Corn oil 1/4 cup
Cornstarch 1/8 cup
FERNA BAKING POWDER 1 tbsp.
White sugar 1/2 cup
Vinegar 1/2 tsp.


FILLING

Ingredients Quantity
White sugar 1/2 cup
All purpose flour 1/2 cup
Evaporated milk 1 can
Egg, medium 1 piece
FERNA PRIMERA BUKO PINA FLAVOCOL 3 3/4 tsps.

Other FERNA PRIMERA option:
FERNA PRIMERA UBE FLAVOCOL 4 tsp

PROCEDURE:
1. Mix all dough ingredients for 8 minutes or until gluten is fully developed. Rest for 30 minutes.
2. In a heavy saucepan, combine all filling ingredients except egg. Cook over medium heat. Add egg when the mixture is slightly thick. Continue mixing until mixture is thick enough. Transfer filling to a bowl and mix for 2 minutes until smooth. Set aside to cool.
3. Scale dough into 60 gram portions, form into balls and rest for 20 minutes.
4. Flatten a piece of dough. Place 1 tablespoon of filling on the dough and seal. Proof sealed side down for 1 hour and 30 minutes.
5. Steam for 30 minutes.

Yield: 20 pcs.
