FILLING

| All purpose flour |

| Evaporated milk |

FERNA PRIMERA UBE FLAVOCOL 4 tsp
PROCEDURE:
1. Mix all dough ingredients for 8 minutes or
until gluten is fully developed. Rest for 30
minutes.
2. In a heavy saucepan, combine all filling
ingredients except egg. Cook over medium heat.
Add egg when the mixture is slightly thick.
Continue mixing until mixture is thick enough.
Transfer filling to a bowl and mix for 2 minutes
until smooth. Set aside to cool.
3. Scale dough into 60 gram portions, form into
balls and rest for 20 minutes.
4. Flatten a piece of dough. Place 1 tablespoon
of filling on the dough and seal. Proof sealed
side down for 1 hour and 30 minutes.
5. Steam for 30 minutes.
Yield: 20 pcs.
