FERNA MANGO BAR

Ingredients Quantity
All purpose flour 3 cups
FERNA BAKING POWDER 2 tsps.
FERNA IODIZED SALT 1/2 tsp.
Butter 1/2 cup
Shortening 1/4 cup
Sugar 1 cup
Egg, slightly beaten 1 piece
Lemon juice 1/4 cup
FERNA PRIMERA EGG YELLOW POWDER COLOR 1/8 tsp.
Mango preserves 1 cup
Dried mango, cut into small pieces 1 cup
Cashew nuts, coarsely chopped 1 cup

PROCEDURE
1. Lightly grease with butter 9x13x2-inch rectangular pan. Set aside.
2. Sift flour, FERNA BAKING POWDER, and FERNA IODIZED SALT three times. Set aside.
3. Cream butter, shortening and sugar until light and creamy for 3 minutes.
4. Beat in egg, lemon juice just until blended.
5. At low speed, add flour mixture; beat until blended.
6. Remove 1/4 of the dough then wrap in plastic wrap. Freeze for 1 hour until solid. Wrap the remaining dough in plastic wrap. Chill until firm for 1 hour.
7. Preheat oven to 3500F.
8. Press the chilled dough onto the bottom of the prepared pan.
9. Add coloring into the mango preserves. Stir until well combined.
10. Spread preserves on top of the pressed dough in the pan.
11. Top with cashew nuts and dried mangoes.
12. Grate the frozen dough onto the preserves.
13. Bake for 35 minutes until shredded dough is golden in color.
14. Cool on wire rack to cool. Cut into bars
